INTRODUCTION
One crucial facet of Ebira culture that is suffering today due to rapid civilization and globalization is her food. Ebira people have varieties of interesting and awesome food. It is unfortunate that our Ebira local delicacies are becoming unpopular mainly as a result of emigration of indigenes to other part of the country where these delicacies are rare. Hadiza's kitchen curb this sad situation by exposing virtual readers to the various methods of preparing Ebira dishes with ease. This is embarked on the hope that this beautiful and awesome tradition will remain in time forever.

Epeiza
Epeiza is a celebrated meal among the Ebira people. It is also known as beans soup. Ingredients
required to prepare Epeiza are; beans, meat or fish, seasoning, salt, pepper,
onion and locust beans, palm oil. In preparing this soup:
The beans is crushed with it coat into flour. Pot is set on fire with
the meat or fish, seasoning is added, onion, pepper and water. The mixture is
allow to boil for about 20minutes, then the beans flour is added to the boiling
stock and allow to cook properly together. Epeiza is served along with pounded yam,
fofo (cassava ball), eba.
Ebatu
Another delicacy in Ebira-Land is the Ebatu (garden-egg soup). Ebatu soup
is made from Garden-egg also called the Eggplant. To prepare Ebatu, you need
garden-egg, seasoning, salt, pepper, fish or meat and water. Ebatu soup is
consumed with pounded yam, eba and fofo (cassava ball), amala.
Akpakpa is another meal celebrated by the Ebira people. Akpakpa is like
the regular moi-moi, the only difference is that the coat of the beans is not
removed when milling. Ingredients added are palm oil, pepper, onion, potash
for softening and salt. Others are crayfish, meat, egg and fish
Gorigo (beniseed) is a typical Ebira snack with has become popular nationally. This snacks can a be serve to guest at traditional weddings as appetizers.
